Abstract

Yeast metabolizes sugar to produce ethanol, among many other things. Therefore, we decided to observe how different types of sugar affect the growth of yeast and the rate at which they produce ethanol. We measured the rate of ethanol production when yeast was fed table sugar, rice sugar, corn sugar, and brown sugar to determine which was most effective in encouraging growth and ethanol production in yeast. According to our investigation we observed that corn sugar does in fact induce the most production of ethanol. However, rice sugar was a close second and it would be productive to hold another experiment between the two.
