Pour Some Sugar On Me: How do different sugars affect yeast fermentation?
Abstract
Research on yeast used for biofuels and bioethanol led us to the question of; which sugar, when added to yeast and water, yields the most CO2? From this, we formulated our hypothesis: if yeast is combined with water, rice sugar and pure glucose, it will produce more CO2 than yeast combined with water, just rice sugar, or yeast combined with rice sugar and sucrose or lactose. To evaluate our hypothesis we measured the amount of CO2 produced from mixing yeast with various sugars. We found that…..
