Rising to the Top: Yeast Growth Rate Vs Fermentation Temperature

Abstract


We are investigating the differences in yeast (Saccharomyces cerevisiae) growth rate as fermentation temperature changes. Our research could aid bread making and wine making techniques, which use yeast to produce their products. We hypothesized that with an increase in fermentation temperature there would
be an increase in yeast growth. The end results of the experiment indicated that as temperature increases to a certain point, there is an increase in yeast growth. The CO2 emissions roughly doubled over the fermentation temperature span from 15° to 30° Celsius. These findings indicate that as temperature increases to a certain point, yeast growth will increase as well.
